Cranberry Coffee Cake with Walnut-Crumb Topping is Perfect for Holidays

Cranberries are from North America. Most of America’s cranberries come from five states: New Jersey, Massachusetts, Wisconsin, Washington, and Oregon. Farmers must know how to grow cranberries and have the right conditions to produce the crop year after year.

According to the Oregon Cranberry Network website, cranberries “grow and survive only in the presence of a rare and delicate combination of soil and geology, the right climate, an abundant water supply, and a dedicated grower.”

The Cape Cod Cranberry Growers’ Association explains how to grow cranberries in their article “Cranberries 101.” Cranberries grow on low vines in bogs, which are beds of sand, peat, gravel and clay. Vines can produce fruit for decades. “Some Cape Cod vines are over 150 years old and still bear fruit,” the association says.

Doctors and nutritionists thought vitamin C was the only health benefit of cranberries. However, recent research suggests that cranberries and cranberry juice may help prevent cancer, fight aging, reduce the risk of heart disease, and prevent urinary tract infections.

Fresh cranberries can be added to muffins, quick breads, rice dishes, treats, sauces, dessert cakes and coffee cakes. The red berries on top of this cake make it perfect for the holidays. You can serve it for breakfast or as a snack. As far as possible, I have replaced less healthy ones with healthier ingredients, but butter must be used as the filling for the crumb. If you are allergic to nuts, omit them and sprinkle 1 1/2 cups of cranberries on top of the dough.

Take out the dough bowl, gather the children and mix the cranberry coffee cake with nut crumbs. Baking methods and the smell of cinnamon will put you in a festive mood. Make two coffee cakes, one for your family and one as a gift. Print the recipe on a card and tie it to the gift cake with a big bow.

INGREDIENTS

1 large egg

1/2 cup Splenda sugar mix

1/2 cup skim milk

2 tablespoons of extra light olive oil

1 cup pre-sifted plain flour

2 teaspoons of baking powder

1 teaspoon of cinnamon

1/2 tsp low sodium salt

1 cup halved cranberries

3/4 cup half white, half wheat flour

1/2 cup sugar

1/2 tsp cinnamon

3 tablespoons of cold butter

1/2 cup chopped walnuts

METHOD

Preheat the oven to 375 degrees. Put the egg, Splenda Sugar Blend, skim milk and olive oil in a small bowl. Whisk well with a fork and set aside.

Mix the flour, baking powder, cinnamon and salt together in a bowl. Set aside while you make the Muru filling.

Mix half white flour, half wheat flour, sugar and cinnamon in a bowl. Knead in cold butter with a hand mixer or a fork. Add the walnuts on top of the crumbs.

Add the wet ingredients to the dry and mix just until the mixture is combined. Coat an 8″ square baking dish with cooking spray. Pour the batter (it’s thin) into the pan and spread to the corners. Sprinkle the cranberries over the batter. Sprinkle the cranberries with walnut crumbs. Bake for 25-30 minutes. Serve warm Makes nine servings.
