4 ounces (1 cup) chopped pecans

Preheat the oven to 350 F (180 C/Gas4)

Butter a 2 liter casserole or baking dish

In a large bowl, mix the mashed potatoes with 1 cup brown sugar, the eggs, vanilla extract, milk and 1/2 cup melted butter. Mix thoroughly; spoon the mixture into the prepared pan.

In another bowl, combine remaining 1/2 cup brown sugar, flour, remaining 1/4 cup melted butter, and chopped pecans; mix thoroughly.

Sprinkle the pecan topping mixture over the top of the sweet potato casserole.

Bake the pan for 35-40 minutes, until the filling is hot and the top is browned.

Peel 3 large potatoes; cut into 1-inch slices and place in a pan. Pour water over it and bring it to a boil; and reduce heat to medium-low. Cover the pan and cook for about 15 minutes or until the potatoes are very tender. Drain, mash and let cool slightly before using in the recipe.
